Miso Udon Soup


Feeds about 5-6 people


Items needed -
  • 2 stalks green onion
  • 1/2 small head of cabbage
  • 2 stalks bok choy 
  • Half medium yellow onion
  • 3 mushrooms 
  • 1 1/2 cups frozen broccoli
  • 2 table spoons of red miso paste
  • 1/2 carton extra firm Tofu
  • 1 package udon noodles
  • Salt
Optional Spiciness -
  • Kimchi
  • Sriracha

Directions
  1. Wash all the veggies
  2. Slice onions, bok choy, cabbage, and mushrooms in thin vertical slices, and throw in pot of shallow simmering water to steam.
  3. Add frozen broccoli.
  4. Chop green onion. Throw half in pot and save half for garnish.
  5. Open package of tofu, rinse, slice in half. Store half in container with fresh water in fridge for later use.
  6. Dice remainder in medium sized cubes and add to pot
  7. Add Udon package. 
  8. Add salt and sriracha to taste.
  9. Let simmer few minutes.
  10. Add hot water to cover and bring back to simmer.
  11. Shut of direct heat. Pre dissolve 2 to 3 tablespoons of miso in separate bowl of warm water. Add mixture to pot. 
  12. Serve on bowl, add extra Sriracha if desired and fresh green onion.
